When bits and molecules collide: How technology is reshaping our food systems and decentralizing the food industry.
Industrialization and urbanization has centralized and industrialized our food systems. Without fully understanding the impact on your ecosystem, technology has primarily been used to produce larger quantities, increase the size of produce, imitate the flavor of natural products and perfect the aesthetics.
Us consumers are increasingly aware of the negative externalities of this industrialization on our health, the environment, the social and economic circumstances of production.
Since it’s not just about the food that’s on our plates but the entire process from planting to consumption that we are talking about, the impact on the way we live is much more significant than that of most other industries. Just think about cattle farming being one of the largest culprits of climate change.
Yet technology is giving us the tools to decentralize these systems, optimize for a more holistic perspective and also transcend the boundaries of what was possible until now.
From lab grown meat, vertical farming to personalized food based on your microbiome, we explore what technology is enabling us to do, the problems that need solving and the importance of design, culture, human identity and history in the process.
What are the biggest threats in our food systems to your health?
What technology platforms reshape our food systems?
What are acceptable trade-offs? E.g. can lab grown meat be organic?
